Tomato Mac & Cheese


I was looking for some recipes that you could make ahead of time, and pop it into the oven on the night of.  When I came across this Ina Garten's recipe, I said to myself, "I should give it a try!"

Since I don't have all the ingredients that the recipe called for, I called for some "Be-Your-Own-Chef" (BYOC) moment.  I substituted fresh breadcrumbs with panko breadcrumbs (mixed in with some Italian seasonings and parsley).  Instead of using 4 cups of  Gruyere cheese, I used 1 cup of Extra Sharp Cheddar cheese, and 3 cups of Smoked Gouda.  This recipe is a true winner!  My husband now kept asking me every day when I will make it again.
